Peanut Butter Oat Balls

I’ve made these many times. Once, I accidentally added too much peanut butter so to fix the recipe, I added chai seeds - which are great for absorbing the extra liquid. Usually though, they are great without chia. Either way, you get a nutrient dense snack that can be easily had for breakfast.

 

Ingredients:

  • 1 1/3 cup peanut butter

  • 2 cup oats

  • 1 cup ground flax

  • 1/2 - 1 cup chocolate chips

  • (Optional) 2 tbsp sweetener of choice - I’ve used maple syrup and it works quite well but you can use honey, stevia (use less), etc.

 
 

Method:

  1. Mix all ingredients in a bowl

  2. Refrigerate for 1 hour until the dough is easier to make into balls

  3. Bake into balls while you sit and watch your favourite sitcom - or get some much-needed standing time

  4. Freeze some, store some in the refrigerator
