Baked Oats

I ended up making these with leftover ingredients from the fridge. Personally, I don’t like steel-cut oats, but the only way I could eat them was to bake them in this! I do prefer the version with flaked oats.

 

Ingredients:

  • 2 cups coconut milk

  • 1/3 cup maple syrup

  • 1/3 cup peanut butter

  • 1 tsp vanilla

  • 2 cups oats

  • 1/4 cup cocoa powder

  • 1 tsp baking powder

  • 1 tbsp ground flax

  • pinch salt

  • 1/3 cup chocolate chips

 
 

Method:

  1. Heat oven to 350

  2. Mix all ingredients in large bowl

  3. Add to an 8 by 8 ungreased baking dish

  4. Bake for 40 minutes

  5. Allow to cool and cut into large squares, each a serving for breakfast with fruits
