Baked Eggs

Want a fancier way to eat eggs? Then look no further! Baked eggs are incredibly easy and you can add your favourite vegetables to them as well! It’s a great way to use leftover veggies and bake them either in individual-sized containers such as ramekins or a larger one. I recently bought 3 lonesome ramekins that I wanted to use so badly - and what better way to use them than to bake eggs! :) This recipe makes for 3 (1 egg each served in one ramekin).

 

Ingredients:

  • 3 eggs

  • butter for greasing the ramekin

  • 3 tbsp heavy cream (you can also use half and half)

  • shredded cheese (you can use any, I like old cheddar or Gruyere). Use a handful for each ramekin

  • 3 tsp finely chopped fresh chives

 
 

Method:

  1. Heat oven to 375 degrees F

  2. Grease each ramekin with butter

  3. Add a tablespoon of cream to each ramekin

  4. Then crack one egg in each ramekin

  5. Sprinkle salt and pepper

  6. Add cheese

  7. Top with chives

  8. Bake for 10-12 minutes. If you like your yolks runny, the top will be wobbly when taken out of the oven. For those that would like a firmer yolk, bake for 15 minutes

  9. Serve with salad and fresh fruit
