Quick Vegan Truffles

These are the EASIEST and most decedent dessert you will make. Takes only 5 minutes!

 

Ingredients:

  • 8 oz. vegan chocolate chunks (I use Enjoy Life)

  • 1/2 cup full fat canned coconut milk

  • 1/4 tsp vanilla extract

  • pinch salt

 
 

Method:

  1. Chop the chocolate finely using a knife and a cutting board

  2. Heat milk just until it starts to bubble slightly (almost a boil)

  3. Add chocolate, vanilla, salt, and stir until smooth

  4. Pour batter into an air tight container ( or in a bowl with cling wrap) and refrigerate for at least 2 hours

  5. After the mixture has hardened, use a melon baller or 2 spoons and scoop to make small balls (they are very rich so smaller size is a better option)

  6. Optional: in small bowls, add cocoa powder, shredded coconuts, crushed peanuts, crushed nuts or melted chocolate for coating the balls

  7. Roll the balls in either or all of the toppings and refrigerate again on a lined parchment tray for at least 2 hours

  8. They come out super melty but are DELICIOUS. Super decadent.

  9. Store in the freezer for 1-2 months shelf life
