Cookie Dough Balls

 
The first time I made them, I used coconut manna as it was all I had. They turned out very tasty, although the manna was hard to mix. When I made them a second time, I used coconut oil and the consistency was smoother.

Update: I made these recently and did not put any sweetener and they came out great! The only sweetener I used was buckwheat honey for the chocolate coating which gave it a very nice, nutty flavour.

Ingredients:

  • 1 2/3 cups ground almond meal

  • 1/3 cup melted coconut oil (you can use coconut manna but you’ll have to double the quantity)

  • optional 1/4 or 1/3 cup maple syrup - I personally prefer no sweetener

  • 1 tsp vanilla extract

  • 1/3 cup mini chocolate chips

    For the chocolate coating

  • 3 tbsp melted coconut oil

  • 1/2 cup chocolate chips/chunks - melted

 
 

Method:

  1. Combine all ingredients in a bowl (without the chocolate chips) and mix

  2. Add in chocolate chips

  3. Refrigerate for 30 minutes to an hour

  4. Make balls or logs out of the dough

  5. Melt the coconut oil and chocolate

  6. Dip the balls in the chocolate and leave on parchment paper or a plate

  7. Let cool for 30 minutes to an hour in the refrigerator
