Almond Egg Pancakes

The other pancake recipe I have on this blog is vegan, and it’s dense. Not everyone likes their pancakes dense, so if you’re looking for an airy light consistency, WHILE at the same time being SUPER filling - try these out! They are not vegan but I am sure you can substitute a flax or chia egg. I haven’t tried it myself but will update on the blog when I do.

Serving size: yields 4-5 small pancakes

Ingredients:

  • 1 cup almond flour

  • 2 eggs

  • 1 tbsp maple syrup or sweetener of choice

  • 1/2 tsp vanilla extract

  • pinch salt

  • 1/4 cup water

  • Optional: 1/4 cup vegan mini dark chocolate chips

 
 

Method:

  1. In a large bowl, combine all ingredients and mix well

  2. Fold in the chocolate chips

  3. Heat non stick pan or pan with some coconut oil or any fat

  4. add a two tablespoon serving and cook until sides bubble

  5. flip and cook 1 minute

  6. Serve with maple syrup, fresh fruit, cream, whatever you want :)

  7. Enjoy!
